Apple Bananas with Rum Mascarpone
The most common varieties of bananas found in supermarkets are usually Cavendish or Williams.
The Apple Banana is firmer and has a slight tang or "bite" to it. This unlike the common varieties which are usually very sweet.
Ingredients
- 8 3/4 oz pot mascarpone chilled
- 3 tsp light muscovado sugar
- 3 tbsp dark rum
- 12 apple bananas
- 3 oz dark chocolate chopped
Instructions
- Spoon the mascarpone into a bowl and stir in the sugar and rum. Cover and set aside in a cool place.
- Barbecue the unpeeled bananas over medium hot coals, or grill for 8 to 10 minutes, turning frequently until tender and blackened.
- Split the bananas open, sprinkle a little chocolate inside each and top with the mascarpone. Sprinkle over the remaining chocolate before serving.
