Basic Tomato Sauce
Ingredients
- 2 tbsp olive oil
- 1 large onion finely chopped
- 1 garlic clove peeled and crushed
- 14 oz canned Italian tomatoes sieved, or 10 fresh tomatoes, skinned and deseeded
- 3 floz red wine
- 2 tbsp finely chopped fresh parsley or 1 tsp dried
- oregano
Instructions
- Heat the oil and fry the onion and garlic until soft, about 15 - 20 minutes. Do not brown.
- Add the remaining ingredients and seasoning. Simmer for 30 minutes, stirring often.
