Ingredients
 

  • 2 tbsp olive oil
  • 1 large onion finely chopped
  • 1 garlic clove peeled and crushed
  • 14 oz canned Italian tomatoes sieved, or 10 fresh tomatoes, skinned and deseeded
  • 3 floz red wine
  • 2 tbsp finely chopped fresh parsley or 1 tsp dried
  • oregano

Instructions

  • Heat the oil and fry the onion and garlic until soft, about 15 - 20 minutes. Do not brown.
  • Add the remaining ingredients and seasoning. Simmer for 30 minutes, stirring often.
