  • 1 1/2 lb new potatoes scrubbed
  • 6 tbsp salad oil
  • 3 tbsp vinegar
  • 1 garlic clove skinned and crushed (optional)
  • salt and freshly ground pepper
  • chopped parsley or snipped chives to garnish


  • Cook the potatoes in boiling salted water for 10-15 minutes until tender. Drain and, while still warm, remove the skins. Put the potatoes into a serving dish.
  • Put the oil, vinegar and garlic (if using) into a screw-top jar. Season well and shake. Pour over the potatoes while still warm and leave to cool for 1 - 2 hours.
  • Serve sprinkled with parsley or chives.
