White Fish Curry
Ingredients
- 3 Tbs Vegetable oil
- 2 Medium onions chopped
- 4 Garlic cloves crushed
- piece Fresh root ginger peeled 2 1/2 cm (1 in) and finely chopped
- 6 Green chillis halved and seeded
- 1 tsp Turmeric
- 2 tsp Ground coriander
- 1/4 tsp Black pepper
- 10 floz Thin coconut milk
- 2 lb Cod steaks
- 15 floz Thick coconut milk
- 1 tsp Salt
- 2 Tbs Lemon juice
- 1 tsp Sugar
- 1 Tbs Chopped coriander leaves
Instructions
- Heat the oil in a large saucepan. Add the onions and fry until they are golden brown.
- Add the garlic, ginger and chillis and fry for 3 minutes, stirring frequently.
- Add the turmeric, coriander and pepper and fry for 2 minutes.
- Pour over the thin coconut milk and stir to mix. Add the fish and bring to the boil. Cook for 5 minutes.
- Carefully stir in the thick coconut milk and salt and reduce the heat to low. Simmer for 20 minutes, or until the fish flakes easily. Remove from the heat and stir in the lemon juice and sugar.
- Transfer the curry to a warmed serving dish. Sprinkle over the coriander leaves and serve at once.
