This easy to make vanilla biscuits recipe is perfect for breakfast, brunch, or dessert. They are moist and fluffy with a delicious flavor of vanilla.

Ingredients
 

  • 8 oz self raising flour
  • pinch salt
  • 5 oz butter cubed
  • 4 oz caster sugar
  • 3 egg 1 size, beaten
  • 2 tsp vanilla essence
  • glace cherries to decorate

Instructions

  • Place the flour, salt, butter and sugar into the processor bowl and process for 10 seconds.
  • With the machine still running add the beaten egg and vanilla essence and mix to a very stiff dough. (Add more egg if required).
  • Turn out onto a floured surface and knead the dough until smooth. Chill.
  • Roll out the dough fairly thinly and cut into rounds with a plain or flutted cutter.
  • Place on a greased baking tray and prick biscuits well with a fork. Place a halved glace cherry into the centre of each biscuit. Chill.
  • Bake in the centre of the oven at 180°C, 350°F, Gas No. 4 for about 10 minutes or until a pale golden brown.
  • Allow to cool for 2-3 minutes before transferring onto a wire cooling rack.
