
Turkey with Walnuts
Ingredients
- 1 tablespoon oil
- 1 onion finely chopped
- 1 garlic clove crushed
- 1 turkey breast skinned, sliced and cut into small slivers
- grated rind and juice of 1 orange
- 1 oz walnuts chopped
- 1 tablespoon soy sauce
- 2 teaspoons cornflour blended with 4 tablespoons water
- 1 teaspoon clear honey
- 1 tablespoon finely chopped parsley
- pepper
- orange rind shredded, to garnish
Instructions
- Heat the oil in a non-stick frying pan, add the onion and fry, stirring for 2 minutes. Stir in the garlic and push the mixture to one side of the pan.
- Tilt the pan to let the juices run out over the base. Add the turkey slivers and stir-fry for about 2 minutes. Remove with a slotted spoon and keep warm in a warmed serving dish.
- Add the orange rind and juice, walnuts, soy sauce, blended cornflour, sugar and parsley to the pan. Bring to the boil, stirring, then simmer until thickened. Add pepper to taste and pour over the turkey. Garnish with orange rind.
- Walnuts do not keep well as their oil tends to go rancid. They should therefore be bought in small quantities and used as soon as possible. When they are really fresh, the skin enclosing the kernel can easily be removed.
