Hungarian Turkey Ragout
This Hungarian Turkey Ragout is a savory meat dish with vegetables, made in the style of the country's famous gulyas. It's a healthy, hearty meal that will warm you right up on chilly days.
Ingredients
- 18 oz turkey breast
- 2 onions
- 3 cup button mushrooms
- 1 tbsp lemon juice
- 2 tbsp oil
- 2 tbsp butter
- 4 floz soured cream
- 2 tsp cornflour
- 1 tsp paprika
- 4 floz dry white wine
Instructions
- Wash and dry meat before cutting into thin slices.
- Peel and finely chop onions. Wash and trim mushrooms, slice thinly and sprinkle with lemon juice.
- Heat oil in a large, heavy-bottomed pan. Brown meat, turning until done, then remove from pan.
- Melt butter with oil in the pan and fry onions until transparent. Add mushrooms, cover and sweat for 10 minutes.
- Mix soured cream with cornflour and paprika.
- Return meat to pan with mushrooms, add cream mixture and then white wine.
- Simmer ragout gently for a few minutes.
- Season to taste with salt and pepper.
