This Hungarian Turkey Ragout is a savory meat dish with vegetables, made in the style of the country's famous gulyas. It's a healthy, hearty meal that will warm you right up on chilly days.

  • 18 oz turkey breast
  • 2 onions
  • 3 cup button mushrooms
  • 1 tbsp lemon juice
  • 2 tbsp oil
  • 2 tbsp butter
  • 4 floz soured cream
  • 2 tsp cornflour
  • 1 tsp paprika
  • 4 floz dry white wine


  • Wash and dry meat before cutting into thin slices.
  • Peel and finely chop onions. Wash and trim mushrooms, slice thinly and sprinkle with lemon juice.
  • Heat oil in a large, heavy-bottomed pan. Brown meat, turning until done, then remove from pan.
  • Melt butter with oil in the pan and fry onions until transparent. Add mushrooms, cover and sweat for 10 minutes.
  • Mix soured cream with cornflour and paprika.
  • Return meat to pan with mushrooms, add cream mixture and then white wine.
  • Simmer ragout gently for a few minutes.
  • Season to taste with salt and pepper.
