  • 1 lb turkey meat
  • 4 tablespoons peanut butter
  • 1 teaspoon ground cumin
  • 1 teaspoon chilli powder
  • 1/4 pint fresh milk
  • 6 oz fromage frais
  • endive and wedges of lime to serve


  • Cube the turkey and thread onto skewers.
  • Blend together the peanut butter, spices and milk. Pour over the kebabs and marinade for 2 hours.
  • Grill the kebabs basting with marinade.
  • Place remaining marinade in a pan, bring to the boil and cook stirring for 2 minutes. Remove from the heat and stir in the fromage frais, reheat without boiling.
  • Serve the kebabs with sauce, endive and wedges of lime.
