Thia Baked Courgettes with Coconut (Urap Panggang Sayur)
Ingredients
- 4 1/2 lb sliced courgettes
- 3 1/2 oz chopped onion
- 3 chopped cloves of garlic
- 3 crushed dried red chillies
- 2 tsp coriander powder
- 2 oz shrimp paste
- 2 1/2 oz desiccated coconut
- 1 oz tomato puree
- 6 3/4 floz water
Instructions
- Sauté 3 1/2 oz chopped onion, 3 chopped cloves of garlic and 3 crushed dried red chillies in oil; stir in 2 tsp coriander powder, then add 2 oz shrimp paste, 2 1/2 oz desiccated coconut and 1 oz tomato puree and moisten with 6 3/4 floz water; cook and reduce slightly.
- Place 4 1/2 lb sliced courgettes into a buttered and seasoned earthenware dish; add the sauce and bake at 180°C for 1 hour.
