Ingredients
 

  • 8 oz Green peas hara matar, shelled
  • 5 oz French beans trimmed, cubed
  • 4 Carrots gajar, peeled, cut into pieces
  • 11 oz Cauliflower phoolgobhi
  • 11 oz Baby potatoes peeled or 3 Potatoes, large, peeled, cut into cubes
  • 11 oz Yam jimikand, peeled, cut into cubes
  • 2 Sweet potatoes shakarkand, medium-sized, peeled, cut into pieces
  • 11 oz Baby onions peeled
  • 3 1/2 floz Vegetable oil
  • 3 Onions sliced
  • 3 Tomatoes finely chopped
  • 4 Green chillies finely chopped
  • 3 tbsp Green coriander hara dhaniya, finely chopped
  • 3/4 cup Mint pudina leaves, finely chopped
  • 1 pod Garlic lasan, finely chopped
  • 1 1/2 floz Vinegar sirka
  • 2 tbsp Sugar
  • Salt to taste

Instructions

  • Heat the oil in a pan; shallow fry the first 8 vegetables, separately.
  • Heat 2 tbsp oil in a pan; saute the onions till light brown. Add the remaining vegetables; simmer for 3 - 4 minutes. Mix in the fried vegetables.
  • Add the remaining ingredients; simmer for 5 more minutes. This a sweet and sour preparation.
