The Italians are very fond of the ''sweet and sour'' taste in food, especially game and vegetables rabbit and hare for instance and courgettes [zucchini) are also cooked in this way.

Ingredients
 

  • 2 floz Vegetable oil
  • 1 Medium onion chopped
  • 1 Small green cabbage finely shredded
  • 4 Tomatoes blanched, peeled, seeded and chopped
  • 2 Tbs White wine vinegar
  • Salt and pepper to taste
  • 1 Tbs Sugar

Instructions

  • Heat the oil in a deep frying-pan. Add the onion and fry until it is soft. Stir in the cabbage, a handful at a time, and, as it goes down, add the next.
  • Then stir in the tomatoes, vinegar, salt and pepper.
  • Reduce the heat to low and simmer for 15 to 20 minutes, or until the cabbage is cooked.
  • Stir in the sugar and cook for 1 minute longer. Transfer to a warmed serving dish and serve at once.
