Ingredients
 

  • 3.3 lb small okras
  • 3 1/2 oz butter
  • 7 oz chopped onion
  • 9 oz tomato concass©e
  • chopped parsley

Instructions

  • Wash and trim both ends of 3.3 lb small okras (ladies' fingers).
  • Heat 3 1/2 oz butter in a pan and Sauté 7 oz chopped onion without colour, add 9 oz tomato concassée and the okras; season, cover and cook gently for 25 minutes.
  • Serve sprinkled with chopped parsley.
