Curried Okras (Bhendi Kari)
Ingredients
- 3.3 lb okras
- 1 oz ghee
- 3 1/2 oz sliced onion
- 4 fresh green chillies
- 2 sliced cloves of garlic
- 4 tsp grated ginger
- 1/2 tsp turmeric
- 1/2 tsp ground coriander
- 1/2 tsp cumin
- 7 1/2 floz coconut milk
- salt
Instructions
- Trim the okras and wash in cold water.
- Golden fry the onion, garlic, ginger and deseeded and sliced chillies in the ghee. Stir in the turmeric and continue to fry for a few moments.
- Add the okras, coriander, cumin, coconut milk and salt and simmer uncovered for 10 minutes.
