Ingredients
 

  • 3.3 lb okras
  • 1 oz ghee
  • 3 1/2 oz sliced onion
  • 4 fresh green chillies
  • 2 sliced cloves of garlic
  • 4 tsp grated ginger
  • 1/2 tsp turmeric
  • 1/2 tsp ground coriander
  • 1/2 tsp cumin
  • 7 1/2 floz coconut milk
  • salt

Instructions

  • Trim the okras and wash in cold water.
  • Golden fry the onion, garlic, ginger and deseeded and sliced chillies in the ghee. Stir in the turmeric and continue to fry for a few moments.
  • Add the okras, coriander, cumin, coconut milk and salt and simmer uncovered for 10 minutes.
