Steak with Cream Sauce
Ingredients
- 4 fillet steaks each weighing about 6 oz
- 2 garlic cloves skinned and crushed or finely chopped (optional)
- salt and freshly ground pepper
- 2 oz English butter
- 4 oz button mushrooms wiped and very thinly sliced
- 1 oz onion very finely chopped
- 1 tbsp lemon juice
- 2 tbsp Worcestershire sauce
- 2 tbsp brandy
- 5 floz fresh single cream
- 1 tbsp finely chopped fresh parsley
- fresh parsley to Garnish
Instructions
- Rub the steaks with the garlic and season well.
- Hea't half the butter in a frying pan and fry the steaks over a high heat for about 2 minutes on each side to brown. If you like your steaks well done, cook longer. Place in a warm serving dish to keep hot.
- Heat the rewaining butter and quickly fry the mushrooms and onion in the pan until tender. Add the lemon juice, Worcestershire sauce and brandy and bring to the boil.
- Stir in the fresh cream and parsley, bring almost to the boil, check seasoning, then quickly pour over the steaks and serve garnished with a sprig of parsley.
