Tea bread is a very popular teatime treat - it is sweet, spicy and moist, and is particularly good when spread with butter. It will become more moist if wrapped in foil and stored in an airtight tin for a day or two before eating.

Ingredients
 

  • 1 lb self-raising flour
  • 1 tsp salt
  • 1 tsp spoon mixed spice
  • 1/2 tsp cinnamon
  • 6 oz soft brown sugar
  • 4 oz butter
  • 2 eggs beaten
  • 2 tbsp black treacle
  • 6 floz milk
  • 1/2 egg beaten, to glaze

Instructions

  • Sift the flour, salt, spice and cinnamon into a mixing bowl.
  • Stir in the sugar. Rub in the butter.
  • Mix the eggs, treacle and half of the milk together and stir into the flour mixture.
  • Gradually stir in the remaining milk until the mixture drops easily from the spoon when it is shaken.
  • Spoon the mixture into a 1 kg (2 lb) loaf tin lined with greased greaseproof paper.
  • Bake in a fairly hot oven (190°C/375°F or Gas Mark 5) for 3/4 to 1 hour or until well-risen and brown, or when a skewer inserted in the centre comes out clean.
  • Brush with the beaten egg after 30 minutes. Cool on a wire rack before slicing.
