
Spicy Tea Bread
Tea bread is a very popular teatime treat - it is sweet, spicy and moist, and is particularly good when spread with butter. It will become more moist if wrapped in foil and stored in an airtight tin for a day or two before eating.
Ingredients
- 1 lb self-raising flour
- 1 tsp salt
- 1 tsp spoon mixed spice
- 1/2 tsp cinnamon
- 6 oz soft brown sugar
- 4 oz butter
- 2 eggs beaten
- 2 tbsp black treacle
- 6 floz milk
- 1/2 egg beaten, to glaze
Instructions
- Sift the flour, salt, spice and cinnamon into a mixing bowl.
- Stir in the sugar. Rub in the butter.
- Mix the eggs, treacle and half of the milk together and stir into the flour mixture.
- Gradually stir in the remaining milk until the mixture drops easily from the spoon when it is shaken.
- Spoon the mixture into a 1 kg (2 lb) loaf tin lined with greased greaseproof paper.
- Bake in a fairly hot oven (190°C/375°F or Gas Mark 5) for 3/4 to 1 hour or until well-risen and brown, or when a skewer inserted in the centre comes out clean.
- Brush with the beaten egg after 30 minutes. Cool on a wire rack before slicing.
