  • 5 oz wholemeal flour
  • 1 oz rice flour
  • 1 oz molasses sugar
  • 4 oz polyunsaturated margarine


  • Mix the flours and sugar together in a bowl. Rub the margarine into the mixture and knead to form a soft dough.
  • Roll out to 1/4 inch (5 mm) thick and cut out 3 inch (7.5 cm) stars.
  • Cut 1 inch (2.5 cm) plain circles from the centre of half the stars.
  • Brush the remaining stars with beaten egg and top with the holed stars.
  • Bake for 30 minutes at Mark 3 (160°C) 325°F. Cool. Fill each centre with a teaspoon of low sugar jam.
