
Peach and Chocolate Layer
Ingredients
- 8 oz chocolate digestive biscuits
- 14 1/2 oz can sliced peaches drained
- 1/2 pint thick sweetened custard
- 1/2 tsp grated lemon rind
Instructions
- Place the biscuits in the processor bowl and chop finely.
- Reserve 4 peach slices. Place the remaining peaches, custard and lemon rind into the processor bowl and process until smooth.
- Place one third of the biscuit crumbs into the bottom of 4 individual glass dishes.
- Divide half of the fruit between the dishes.
- Repeat the process again with crumbs then fruit, finishing with a layer of crumbs on top.
- Decorate each glass dish with a peach slice.
