Raspberry Sorbet with Summer Berry Sauce is a refreshing summer dessert. It's perfect for any summer party, wedding, or backyard BBQ.

  • 1 lb raspberries sieved
  • 2 oz sugar
  • juice 1/2 orange
  • 2 egg whites
  • 8 oz mixed strawberries/redcurrants sieved


  • Mix the raspberry puree with the sugar and the orange juice. Pour into a freezer container and freeze for 45 minutes.
  • Beat the egg whites until stiff and fold into the raspberry mix. Freeze for a further 1 hour.
  • Beat until smooth. Refreeze until firm.

to serve:

  • Remove from the freezer 1/2 hour before serving.
  • Place in a piping bag with 1/2 inch (1 cm) star nozzle and pipe into individual dishes, or serve in scoops.
  • Serve with the sieved fruit.
