Green Summer Cooler
This recipe is perfect for the summertime. It's light and refreshing, but still satisfying.
- 4 tablespoons creme de menthe
- crushed ice
- 2 pints sparkling mineral water
- mint sprigs to garnish
- Put a teaspoonful of the creme de menthe in the bottom of four tall glasses. Add a little crushed ice, top up with sparkling mineral water and serve immediately garnished with mint sprigs.
- You can use a special gadget which crushes ice in a lidded container or put ice cubes in a strong polythene bag and smash them with a wooden mallet.
