  • 1 onion
  • 4 oz button mushrooms
  • 4 oz cashew nuts
  • 1 pint apple juice
  • salt and pepper
  • 1 teaspoon dried mixed herbs
  • 1 teaspoon yeast extract


  • Chop the onion and halve the mushrooms. Put all the ingredients into a large saucepan, bring to the boil and reduce the heat to simmer gently for 10 minutes.
  • Pour the soup into individual soup bowls and serve with warmed French bread.

Cook's Tip

  • If you have a garden, then try drying some herbs for the winter. Sage, thyme and tarragon, for example, can be tied in bunches and hung in a cool, dry place.
