
Quick Apple and Cashew Soup
Ingredients
- 1 onion
- 4 oz button mushrooms
- 4 oz cashew nuts
- 1 pint apple juice
- salt and pepper
- 1 teaspoon dried mixed herbs
- 1 teaspoon yeast extract
Instructions
- Chop the onion and halve the mushrooms. Put all the ingredients into a large saucepan, bring to the boil and reduce the heat to simmer gently for 10 minutes.
- Pour the soup into individual soup bowls and serve with warmed French bread.
Cook's Tip
- If you have a garden, then try drying some herbs for the winter. Sage, thyme and tarragon, for example, can be tied in bunches and hung in a cool, dry place.
