Apple and Apricot Charlotte
Ingredients
- 7 1 cm (1/2 in slices white bread
- 2 oz butter
- 2 large cooking apples
- 15 oz can apricot pie filling
- 2 oz soft brown or demerara sugar
- 1/2 teaspoon ground cinnamon
- knob of butter
Instructions
- Remove the crusts from the bread and use two slices to make breadcrumbs. Butter the remaining slices and use to line a 1.15 litre (2 pint) ovenproof dish (buttered sides against the dish), cutting them to fit.
- Peel, core and chop the apples.
- Mix with the apricot pie filling and spoon into the lined dish. Mix together the breadcrumbs, sugar and cinnamon and sprinkle over the top.
- Dot a knob of butter over the top and bake in a moderate oven for 50-60 minutes. Serve hot with custard or fresh cream.
- Instead of using the apricot pie filling, double the quantity of apples and add 50 g (2 oz) raisins to make a simple apple charlotte.
