Passover Matzo-Layer Cake
This simple recipe, which seems to be an Israeli invention, is easy enough for a child to make and incredibly delicious.
Ingredients
- 6 tablespoons sugar
- 4 ounces unsweetened chocolate
- 1 cup + 2 tablespoons water
- 1/2 cup butter or margarine cut in pieces
- 6 ounces halva cut in small pieces
- 1/2 cup sweet red wine
- 2 tablespoons potato starch
- 6 large matzos
- sprinkles for decoration
Instructions
- Put the sugar and chocolate in a saucepan and add 1 cup water. Bring to a boil over low heat, stirring constantly with a wooden spoon.
- Add the butter or margarine, halva, and wine. Continue stirring until the mixture boils again, then remove the pan from the heat.
- Mix the potato starch with remaining 2 tablespoons water, then stir starch into the chocolate mixture.
- Return pan to the heat and cook over low heat, stirring until the mixture thickens, about 8 minutes. Remove from the heat.
- Put one of the matzos on a platter large enough for it to lie flat. Use a metal spatula to spread a thin, even layer of the chocolate mixture over the matzo.
- Place another matzo on top and spread it with more chocolate. Repeat with the remaining matzos, finishing with a chocolate layer.
- Scatter sprinkles over the cake. Chill before serving, and do not eat until the following day.
- To serve, cut the cake into small rectangles about 1 inch by 2 inches, using a long, sharp knife.
