Green Peas with Ham
Ingredients
- 1.6 lb fresh shelled or frozen peas
- 1/2 small onion
- 1 oz butter
- 2 oz lean cooked ham
- 1 tsp flour
- 8 1/2 floz general household stock
- a pinch of sugar
- a pinch of grated nutmeg
- salt and pepper
Instructions
- Boil or steam the peas until just tender.
- Skin and chop the onion finely.
- Melt the butter in a pan and fry the onion gently until golden.
- Chop the ham finely and add to the pan with the flour. Cook, stirring, for 1-2 minutes.
- Add the peas, stock, sugar, and nutmeg. Cover the pan and simmer gently for 10 minutes.
- Season to taste before serving.
