Lettuce Soup
Ingredients
- 14 oz lettuce
- 1 medium-sized onion
- 7 oz potatoes
- 1 clove of garlic
- 2 cups white stock
- 2 tsp butter
- bouquet garni
- salt and pepper
- 4 1/3 floz milk
Instructions
- Wash and shred the lettuce.
- Prepare and slice the onion and potatoes.
- Skin and crush the garlic.
- Heatthe stock to boiling point and pour it over the lettuce.
- Melt the butter in a deep saucepan. Add the onion, potato, and garlic, and fry them gently for 10 minutes.
- Add the lettuce and stock, bouquet garni, and seasoning to taste.
- Heat to boiling point; then simmer gently for 2 minutes until the lettuce is tender.
- Remove the bouquet garni.
- Rub the soup through a sieve. Add the milk. Re-heat, and add extra seasoning and sugar to taste.
