  • 6 small lettuces
  • salt
  • 1 oz butter or margarine
  • 3 tbsp flour
  • 8 1/2 floz chicken or vegetable stock
  • 2 tsp chopped chives
  • 1 bay leaf
  • 2 tsp chopped parsley
  • pepper


  • Trim and wash the lettuces.
  • Plunge into boiling salted water for 2 minutes and then drain.
  • Refresh in cold water and drain thoroughly.
  • Melt the fat in a saucepan.
  • Stir in the flour and cook for 1 minute without browning, stirring all the time.
  • Draw off the heat and gradually stir in the stock.
  • Return to the heat and bring to the boil, stirring all the time, until the sauce thickens.
  • Add the herbs and seasoning and then add the lettuces.
  • Cover and cook gently for 30 minutes, stirring from time to time.
  • Remove the bay leaf. Season again if required before serving.
