Lettuce with Herb Sauce
Ingredients
- 6 small lettuces
- salt
- 1 oz butter or margarine
- 3 tbsp flour
- 8 1/2 floz chicken or vegetable stock
- 2 tsp chopped chives
- 1 bay leaf
- 2 tsp chopped parsley
- pepper
Instructions
- Trim and wash the lettuces.
- Plunge into boiling salted water for 2 minutes and then drain.
- Refresh in cold water and drain thoroughly.
- Melt the fat in a saucepan.
- Stir in the flour and cook for 1 minute without browning, stirring all the time.
- Draw off the heat and gradually stir in the stock.
- Return to the heat and bring to the boil, stirring all the time, until the sauce thickens.
- Add the herbs and seasoning and then add the lettuces.
- Cover and cook gently for 30 minutes, stirring from time to time.
- Remove the bay leaf. Season again if required before serving.
