Although this Italian dish is very simple to make, it has an elaborate combination of textures and flavours. Fresh, ripe figs are best for this recipe and the peak season is early to late summer. If you cannot And any prosciutto, use some other sort of Italian parma ham.

Ingredients
 

  • 4 slices prosciutto
  • 4 fresh ripe figs
  • 4 oz soft goat cheese
  • 2 oz frontage frais
  • 12 fresh basil leaves

Instructions

  • Carefully slice the figs into fan shapes with a sharp serrated knife, and arrange on the plates with the slices of ham.
  • Combine the goat cheese and fromage frais by mashing with a fork until smooth. Tear 4 basil leaves into small strips and stir into the cheese.
  • Divide the mixture into round portions and arrange them on the plates. Garnish with the remaining basil leaves and serve immediately.
