Bats Blood Soup
Red as blood this tomatoes and beetroot soup is the best for Halloween parties.
Ingredients
- 1 tbsp sunflower oil
- 3/4 lb long-life beetroot cubed
- 1 small onion peeled and chopped
- 1/2 lb potatoes peeled and cubed
- 3/4 lb can chopped tomatoes
- 10 floz tomato juice
- 10 floz vegetable stock
Instructions
- Heat the oil in a large pan and fry the beetroot, onion and potatoes for 2 to 3 minutes. Add the chopped tomatoes, tomato juice and stock, and bring to the boil. Cover and simmer for 35 minutes.
- Blend in a food processor or with a hand blender until completely smooth.
- Heat through gently and serve with the Witches' Fingers.
