  • 3 lb fresh spinach
  • 2 oz butter
  • 1 oz toasted flaked almonds


  • Trim and remove coarse stalks from the spinach and wash in several changes of cold water. Shake off excess water.
  • Melt 1 oz (25 g) of the butter in a large frying pan and stir fry half of the spinach leaves for about 2 minutes, until just wilted.
  • Fry remaining spinach in remaining butter. Toss together. Sprinkle with almonds.
