Jam Tart #2
Ingredients
- 6 tbsp firm jam
- beaten egg for glazing
Short crust pastry
- 5 oz plain flour
- 1/2 tsp salt
- 2 1/2 oz margarine or half butter, half lard
- flour for rolling out
Instructions
- Set the oven at 220°C (425°F) gas mark 7.
- To make the pastry, sift the flour and salt into a bowl, then rub in the margarine until the mixture resembles fine breadcrumbs. Add enough cold water to make a stiff dough.
- Press the dough together lightly.
- Roll out the pastry on a lightly floured surface and use to line a 20 cm (8 inch) pie plate.
- Decorate the edge with any trimmings.
- Fill with jam and glaze the uncovered pastry with beaten egg.
- Bake for 15 minutes or until the pastry is cooked. Serve hot or cold.
