Indian Stir-Fried Mixed Vegetables (Sabzi Bhaji)
Ingredients
- 1 tsp mustard seeds
- 6 curry leaves
- 3 chopped cloves of garlic
- 4 tbsp oil or ghee
- 2 tsp grated root ginger
- 1 tsp turmeric
- 2 sliced fresh chillies
- salt
- 8 oz julienne of carrot
- 8 oz julienne of cauliflower florets
- 8 oz diamonds of French beans
- 8 oz shredded cabbage
Instructions
- Lightly fry 1 tsp mustard seeds, 6 curry leaves and 3 chopped cloves of garlic in 4 tbsp oil or ghee.
- Stir in 2 tsp grated root ginger, 1 tsp turmeric, 2 sliced fresh chillies and salt.
- Add and stir-fry 8 oz each of julienne of carrot, cauliflower florets, diamonds of French beans and shredded cabbage.
- Remove the curry leaves and serve dome-shape in a vegetable dish
