Indian Fried Aubergines (Begun Bhaja)
Ingredients
- 4 Aubergines baingan, large, cut into quarters
- 2 tsp Salt
- 2 tsp Turmeric haldi powder
- 3 1/2 floz Mustard sarson oil
Instructions
- Rub the aubergines with salt and turmeric powder. Keep aside for half an hour.
- Heat the mustard oil in a shallow pan; fry the aubergines till golden brown in colour.
- Drain the excess oil and serve immediately.
