Fresh Anchovies Baked with Oregano
Ingredients
- 2 1/2 lb fresh anchovies gutted, with heads left on
- Olive oil
- Freshly ground black pepper
- 3 tablespoons oregano chopped
- Juice of 1 lemon
Instructions
- Pre heat the oven to gas mark 7, 425°F (220°C).
- Wash the anchovies and pat them dry with kitchen paper.
- Lightly oil a shallow baking dish with olive oil and lay the fish in it side by side.
- Sprinkle over a good grinding of black pepper, 'the oregano and the lemon juice.
- Drizzle a little olive oil over the fish just enough to give a glaze - then bake in the oven for 10 to 15 minutes, or until they are cooked.
