Ingredients
 

  • 2 1/2 lb fresh anchovies gutted, with heads left on
  • Olive oil
  • Freshly ground black pepper
  • 3 tablespoons oregano chopped
  • Juice of 1 lemon

Instructions

  • Pre heat the oven to gas mark 7, 425°F (220°C).
  • Wash the anchovies and pat them dry with kitchen paper.
  • Lightly oil a shallow baking dish with olive oil and lay the fish in it side by side.
  • Sprinkle over a good grinding of black pepper, 'the oregano and the lemon juice.
  • Drizzle a little olive oil over the fish just enough to give a glaze - then bake in the oven for 10 to 15 minutes, or until they are cooked.
