Ingredients
 

  • 12 oz fresh shelled peas
  • 8 oz potatoes chopped
  • 1 onion chopped
  • 1 large mint sprig
  • finely grated rind of 1/2 lemon
  • 2 tablespoons lemon juice
  • 1 1/2 pints chicken stock
  • salt and pepper
  • 1 tablespoon chopped fresh mint to garnish

Instructions

  • Put the peas in a large saucepan with the potatoes, onion, mint sprig, lemon rind and juice and stock. Season with salt and pepper.
  • Simmer, covered, for 15 - 20 minutes, or until the peas are tender.
  • Puree in a liquidizer or rub through a sieve. Set aside to cool.
  • Adjust the seasoning to taste and chill for 2-3 hours. Serve chilled, sprinkled with the mint.
  • If necessary, use frozen petits pois. They will take less time to cook so add them to the other ingredients in the pan after 5-10 minutes.
