
Chilled Pea Soup
Ingredients
- 12 oz fresh shelled peas
- 8 oz potatoes chopped
- 1 onion chopped
- 1 large mint sprig
- finely grated rind of 1/2 lemon
- 2 tablespoons lemon juice
- 1 1/2 pints chicken stock
- salt and pepper
- 1 tablespoon chopped fresh mint to garnish
Instructions
- Put the peas in a large saucepan with the potatoes, onion, mint sprig, lemon rind and juice and stock. Season with salt and pepper.
- Simmer, covered, for 15 - 20 minutes, or until the peas are tender.
- Puree in a liquidizer or rub through a sieve. Set aside to cool.
- Adjust the seasoning to taste and chill for 2-3 hours. Serve chilled, sprinkled with the mint.
- If necessary, use frozen petits pois. They will take less time to cook so add them to the other ingredients in the pan after 5-10 minutes.
