Cherry and Walnut Muffins
Ingredients
- 5 oz flour
- 5 oz wholemeal flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 oz brown sugar
- 3 oz glace cherries chopped
- 2 oz walnuts chopped
- 1 egg
- 8 floz fresh milk
- 2 oz butter melted
Instructions
- Place the flours, baking powder, salt, sugar, cherries and walnuts in a bowl and mix well.
- Lightly whisk together the egg, milk and butter. Stir into the dry ingredients and mix until evenly blended.
- Spoon into 12 greased muffin tins and bake at 200°C (400°F) mark 6 for 25 minutes.
- Cool in the tin for 5 minutes before turning out.
