With a subtle cheese flavour, these pastry straws' are as light as air. They are good to serve with drinks before a meal as they are not too filling.

Ingredients
 

  • 4 oz flour
  • Salt
  • Pinch of cayenne pepper
  • 2 oz butter
  • 2 oz Cheddar cheese finely grated
  • 1 egg yolk beaten

Instructions

  • Sift the flour and seasonings together in a mixing bowl. Add the butter in pieces and rub together with the fingertips until the mixture resembles fine breadcrumbs.
  • Stir in the grated cheese and the egg yolk. Draw together with the fingertips to form a smooth dough, using a little cold water if the mixture is too dry.
  • Chill in the refrigerator for at least 30 minutes.
  • Roll out the dough thinly on a floured board and cut into strips about 12.5 cm (5 in) long and 0.5 cm (1/4 in) wide.
  • Place on baking sheets and bake in a fairly hot oven (200°C/400°F or Gas Mark 6) for 10 to 15 minutes or until golden.
  • Remove from the oven, allow to cool slightly, then transfer to a wire rack to cool completely. Store in an airtight tin.
