Cheese Blintzes (Israel)
Fruit such as stoned cherries, segments of mandarin or small slices of peach may be added to the cheese filling.
Ingredients
- 4 eggs
- 1/2 pint milk
- 8 oz flour
- 1/2 tsp salt
- 8 oz cottage cheese
- 1 beaten egg yolk
- 2 oz sugar
- 2 oz raisins
- grated zest and juice of 1 lemon
- soured cream mixed with sugar and cinnamon.
Instructions
- Whisk together 4 eggs, 300 ml milk, 225 g flour and 1/2 tsp salt to form a batter and make into blintzes (pancakes).
- Combine 225 g cottage cheese, 1 beaten egg yolk, 50 g sugar, 50 g raisins and the grated zest and juice of 1 lemon.
- Spread on the blintzes, roll up to seal then lightly fry in butter.
- Serve accompanied by soured cream mixed with sugar and cinnamon.
