Cheese Dumplings (Glumskeilchen)
This is my favorite way to make cheese dumplings. They are so delicious!
Ingredients
- 1 lb cottage cheese
- 2 1/2 oz sugar
- 1/4 tsp salt
- 2 beaten eggs
- 1 3/4 oz each of flour and cornflour
- 10 oz dry mashed potato
- 3 1/2 oz currant
Instructions
- Combine 450 g cottage cheese, 75 g sugar, 1/4 tsp salt and 2 beaten eggs, stir in 50 g each of flour and cornflour, then mix in 275 g dry mashed potato and 100 g currants.
- Mould the mixture into small wedge-shapes, then drop into simmering salted water and cook for 10 minutes.
- Drain the dumplings and serve sprinkled with sugar mixed with cinnamon.
