A classic combination of sprouts and chestnuts with a truly Chinese feel. As is the intention with all stir fried vegetables, the sprouts should stay crunchy. Serve with pork, gammon or turkey.

  • 1 lb Brussels sprouts trimmed
  • 1 tbsp vegetable oil
  • 1 small onion finely chopped
  • 2 tbsps sherry
  • 2 tsp soy sauce
  • 10 oz canned water chestnuts drained and sliced
  • 1 tbsp sesame seeds


  • Thinly slice the sprouts lengthways.
  • Heat the oil in a frying pan, add the onion and fry gently until softened.
  • Add the sprouts, sherry and soy sauce and stir fry for 1 - 2 minutes.
  • Add the chestnuts and toss until heated through.
  • Sprinkle with sesame seeds and serve immediately.
