Creamy Baked Egg Starter

Ingredients
- butter for greasing
- 4 sun-dried tomatoes
- 4 medium eggs
- 4 tbsp double cream
Instructions
- Preheat the oven to 180°C/160°C fan oven/Gas Mark 4. Butter four ramekins.
- Place one tomato in each of the four ramekins and season. Carefully break an egg on top of each, then drizzle 1 tablespoon of double cream over each egg. Bake in the oven for 15 to 18 minutes.The eggs will continue to cook once they have been taken out of the oven.
- Leave to stand for 2 minutes before serving.
