Use a fish slice and turn the fans very gently so that they do not break or lose their attractive shape. Hold the match just above the side of the pan and stand well back since the flames will shoot high for a few seconds and could be dangerous.

Ingredients
 

  • 4 large bananas cut into fans
  • 4 tablespoons rum
  • juice of 1 1/2 oranges
  • 1/4 teaspoon ground cinnamon
  • large pinch of freshly grated nutmeg
  • 3 oz butter
  • little lightly beaten egg white
  • 4 tablespoons light soft brown sugar
  • vanilla ice cream or whipped cream to serve

Instructions

  • Pour the rum into a cup and stand in a pan or bowl of hot water to warm through gently. In a separate cup, mix the orange juice with the cinnamon and nutmeg.
  • Melt the butter in a large, heavybased frying-pan over low heat. Lightly brush fans with egg white, then add them to the pan and fry gently for about 5 minutes, turning once, until golden brown on both sides. Sprinkle over the sugar.
  • Pour in the spiced orange juice and heat through gently. Turn off the heat. Pour the warmed rum over the bananas and immediately set light to it. Let the flames die completely, then divide the fans and sauce between
  • warmed individual dishes and serve with ice cream.
