  • 2 large baked potatoes
  • 8 oz streaky smoked bacon
  • 6 tbsp sweetcorn tinned
  • 4 oz butter
  • Grinding of black pepper
  • 4 extra slices of streaky bacon grilled, for garnish


  • Halve the baked potatoes and scoop out the flesh.
  • Grill/broil the bacon till crisp, including the extra slices.
  • Cut the 225 g (8 oz) of bacon into small pieces and mix with the potato, sweetcorn, butter and pepper.
  • Pile the mixture back into the potato shells and garnish with the remaining grilled/broiled bacon.
