Bacon and Sweetcorn Filling
Ingredients
- 2 large baked potatoes
- 8 oz streaky smoked bacon
- 6 tbsp sweetcorn tinned
- 4 oz butter
- Grinding of black pepper
- 4 extra slices of streaky bacon grilled, for garnish
Instructions
- Halve the baked potatoes and scoop out the flesh.
- Grill/broil the bacon till crisp, including the extra slices.
- Cut the 225 g (8 oz) of bacon into small pieces and mix with the potato, sweetcorn, butter and pepper.
- Pile the mixture back into the potato shells and garnish with the remaining grilled/broiled bacon.
