Liver Mushroom and Onion Filling
Ingredients
- 2 large baked potatoes
- 1 medium onion sliced in rings
- 3/4 cup button mushrooms
- 4 oz lambs liver in strips
- Oil for frying
- salt and pepper
- Parsley for garnish
Instructions
- Halve the baked potatoes and scoop out the flesh.
- Saute the onion rings, button mushrooms and liver in a little oil until the liver is cooked.
- Mix with the potato flesh and pile back into the potato skins.
- Garnish with the parsley.
