  • 2 large baked potatoes
  • 1 medium onion sliced in rings
  • 3/4 cup button mushrooms
  • 4 oz lambs liver in strips
  • Oil for frying
  • salt and pepper
  • Parsley for garnish


  • Halve the baked potatoes and scoop out the flesh.
  • Saute the onion rings, button mushrooms and liver in a little oil until the liver is cooked.
  • Mix with the potato flesh and pile back into the potato skins.
  • Garnish with the parsley.
