1. Cut the beef into thin strips 2.5 cm (1 inch) long.
2. In a bowl, mix together the sugar, spices and dark soy sauce.
3. Put the beef, ginger and salt into the soy sauce mixture and stir well to coat evenly Cover and allow to stand for 20 minutes.
4. Heat the oil in a wok or large frying pan and stir-fry the onions quickly for 1 minute.
5. Add the beef and fry, stirring constantly, for 4 minutes, or until the meat is well browned.
6. Stir in the soy sauce and black pepper and cook gently for a further 1 minute.
