  • 2 shallots or 1 small onion finely sliced
  • 1 garlic clove peeled and crushed
  • juice of 1 small lemon
  • 1 tsp chopped fresh tarragon or dill
  • 6 black or green peppercorns crushed


  • Mix all ingredients together and pour over fish or meat.
