
Turkey Portugaise
Ingredients
- 4 turkey fillets about 4 oz each
- 1 garlic clove crushed
- 2 to matoes roughly chopped
- 1 carrot peeled and very thinly sliced
- 1 oz onion chopped
- salt and pepper
Instructions
- Put each turkey fillet on a piece of foil large enough to cover it. Spread a little crushed garlic on each one.
- Divide the tomato, carrot and onion between the fillets. Sprinkle with salt and pepper. Wrap the fillets completely in foil and cook in the oven for about 20 minutes until tender.
- For family meals the turkey could be served in the packages. A green salad is a suitable accompaniment.
