  • 9 oz sweetcorn kernels fresh, canned or frozen
  • 2 beaten eggs
  • 3 1/2 oz flour
  • 1 tsp baking powder
  • salt and pepper
  • 6 3/4 floz oil


  • Mix the cooked sweetcorn, seasoning and eggs together. Add the sifted flour and baking powder and mix to a fairly stiff mixture.
  • Heat the oil in a shallow pan and fry 20 spoonfuls of the mixture in the form of small cakes until golden brown on each side.
