Sweet Potato and Walnut Casserole
Ingredients
- 1 1/2 lbs sweet potato mashed
- 2 tbsp milk
- 2 tbsp water
- 2 tbsp butter softened
- 1/4 pt soured cream
- 1 medium egg
- 2 tbsp dark brown sugar
- 1/2 tsp grated ground cinnamon
- 1/4 tsp grated nutmeg
- 2 tsp salt
- a little pepper
- 2 tbsp walnuts chopped
Instructions
- Blend together the mashed sweet potato, milk, water and butter until smooth and creamy.
- Stir in half the sour cream, egg, sugar and spices and pour into a greased pie dish.
- Bake in the oven Gas mark 4, 350°F (180°C) for 30 minutes until almost set.
- Spoon the remaining sour cream over the top, sprinkle over the chopped walnuts and return to the oven to cook for a further 10 minutes.
- Serve hot or cold with cream.
