Ingredients
 

  • 1 1/2 lbs sweet potato mashed
  • 2 tbsp milk
  • 2 tbsp water
  • 2 tbsp butter softened
  • 1/4 pt soured cream
  • 1 medium egg
  • 2 tbsp dark brown sugar
  • 1/2 tsp grated ground cinnamon
  • 1/4 tsp grated nutmeg
  • 2 tsp salt
  • a little pepper
  • 2 tbsp walnuts chopped

Instructions

  • Blend together the mashed sweet potato, milk, water and butter until smooth and creamy.
  • Stir in half the sour cream, egg, sugar and spices and pour into a greased pie dish.
  • Bake in the oven Gas mark 4, 350°F (180°C) for 30 minutes until almost set.
  • Spoon the remaining sour cream over the top, sprinkle over the chopped walnuts and return to the oven to cook for a further 10 minutes.
  • Serve hot or cold with cream.
