Ingredients
 

  • 3 spring onions trimmed
  • 4 cod steaks
  • a little vegetable oil
  • 1 tbsp tomato puree
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp dry sherry
  • juice of 1 orange
  • pinch of cayenne pepper
  • 1 carrot cut into matchsticks

Instructions

  • Cut spring onions into very fine strips and put into iced water to curl.
  • Brush cod steaks with oil, season and grill for 4 to 5 minutes each side.
  • Mix all remaining ingredients, simmer until thickened slightly.
  • Put steaks on a platter, pour over sauce and top with the curled spring onion shreds.
