Stewed Okras
Ingredients
- 3.3 lb small okras
- 3 1/2 oz butter
- 7 oz chopped onion
- 9 oz tomato concass©e
- chopped parsley
Instructions
- Wash and trim both ends of 3.3 lb small okras (ladies' fingers).
- Heat 3 1/2 oz butter in a pan and Sauté 7 oz chopped onion without colour, add 9 oz tomato concassée and the okras; season, cover and cook gently for 25 minutes.
- Serve sprinkled with chopped parsley.
